Favorite Caramel Apples

1 cup finely chopped salted peanuts
1/2 cup LAND O LAKES Butter
2 cups firmly packed brown sugar
1 cup light corn syrup
Dash salt
1 (14-ounce) can sweetened condensed milk
1 teaspoon vanilla
10 tart apples, washed, dried

1. Place peanuts in small bowl. Set aside.
2. Melt butter in 2-quart saucepan; add brown sugar, corn syrup and salt. Cook over medium heat, stirring occasionally, until mixture comes to a full boil (10 to 12 minutes). Stir in sweetened condensed milk. Continue cooking, stirring occasionally, until small amount of mixture dropped into ice water forms a firm ball or candy thermometer reaches 245øF (20 to 25 minutes). Remove from heat; stir in vanilla.
3. Dip apples into caramel mixture. Dip 1 end of each apple into peanuts. Place onto buttered waxed paper.

Makes 10 apples.

Fossilized Egg Nest Chewies

1/2 pound (2 sticks) butter, softened
1 cup firmly packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups Quakerr Oats (quick or old fashioned, uncooked)
1 1/2 cups all-purpose flour*
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sweetened flaked coconut
1 cup toffee baking bits
1 cup NESTLE TOLL HOUSE Semi-Sweet Chocolate Mini Morsels
1 cup yogurt-covered raisins
36 Gummi dinosaur candies

1. Heat oven to 350F.
2. In large bowl, beat butter and sugar with electric mixer until creamy. Add eggs and vanilla; beat well. Add combined oats, flour, baking soda and salt; mix well. Stir in coconut, toffee bits and mini chocolate morsels; mix well.
3. Drop heaping tablespoons of dough 2 inches apart on ungreased cookie sheets. Gently press 3 yogurt-covered raisins into top of each cookie.
4. Bake 10 to 12 minutes or until golden brown. (Cookies should be soft in center.) Cool 1 minute on cookie sheets; remove to wire racks. Immediately press Gummi dinosaur into top of each cookie. Cool completely. Store tightly covered.

Makes 3 dozen.

* For old fashioned oats, add 2 tablespoons additional flour.

Frightfully Easy Ghost Cookies

1 (12-ounce) bag white chocolate chips
1 tablespoon vegetable shortening
1 (16-ounce) package Nutter Butter Cookies
1 (6-ounce) package miniature chocolate chips

1. In small saucepan, melt chocolate chips and shortening together over low heat, stirring constantly until smooth.
2. Line baking sheets with waxed paper.
3. Holding cookies with tongs, dip entire top and sides of each cookie into melted chocolate, letting excess drip off. Lay flat, coated side up, on prepared baking sheets.
4. Place two miniature chocolate chips in chocolate to form eyes. Let stand until set.

Makes 32 cookies.
